What I ate: September 28, 2011

Breakfast: Chorizo, green pepper, jalapeño, onion and egg breakfast burrito. A quick reheat of the filling I made a few days ago, today.

Snack: 0.7 oz. peanuts and a Spicy V-8.

Lunch: Stir-fry of zucchini and 1 1/2 slices of bacon. And rice.

Time to get back in shape for ski season: walk/run intervals (couch to 5K, week 5, day 1, in particular) 3 MPH walk, 6 MPH run on the treadmill, 30 minutes, 2.25 miles total.

Dinner: Italian sausage spaghetti and garlic bread.

I previously pre-cooked, vacuum sealed and froze the sausage; I defrosted it in water then microwaved for 40 seconds. The homemade pasta sauce I also made, vacuum sealed and froze. I defrosted that and microwaved for 45 seconds. The pasta is freshly made dried pasta, since freezing pasta doesn't really work that well. And the garlic bread is from previously frozen wheat Italian bread, but I defrosted that and made it into a quick garlic bread.

I have a ridiculous collection of Absolut flavored vodka but my brother-in-law found this rather unusual addition, Absolut Watkins: coffee, almond and chiles. And it's quite tasty. Curiously it's only available in duty-free shops. And unlike the limited edition specialty flavored vodkas it's not named after a city - it's named after Swedish artist Liselotte Watkins.

Cooked two pounds of bacon. Here it is on sheet pans ready to go into the oven. That gets cooked then frozen so I can pull out a few pieces for breakfast, a sandwich, etc..

And grilled two filet mignon steaks. They're not fully cooked - one is for dinner tonight and the other will be frozen. They'll be finished off in the sous vide machine so they're perfect medium-rare all the way through every time.

By the way, there was a great op-ed piece from Mark Bittman in the New York Times today about getting more people to eat healthy, homemade food.

These little bottles of orange juice (10 oz.) and Prosecco (200 ml) are great! I don't normally drink orange juice on that whole "don't drink calories unless alcohol is involved" so I'd never finish a whole carton. And beginning a Sunday morning with an entire 750ml bottle of champagne is pretty much an invitation for nothing to happen the entire day, so this baby bottle is perfect!

Lunch: Stir-fry of shrimp and white onion with spinach. I defrosted the shrimp for dinner last night, intending to make shrimp scampi with spinach but I decided I was more in the mood for a cheeseburger last night, so I had a last minute meal change, and some extra shrimp.

It's hot here again! I thought I'd take advantage of one of the last 80°F degrees of the year by having a gin and tonic. With Hendrick's gin and Fever Tree (HFCS-free all natural tonic water). Yummy!

Dinner: Chinese buffet at Iron Chef Buffet in Oneonta with Mom and Dad. I didn't take pictures, but it's safe to say my plates looked almost exactly like last week.

And 2 glasses of Aguaribay malbec. And 2 strips of Dagoba xocolatl chocolate bar.

Snack: 1.0 oz. Doritos. Funny thing: most of the time I eat peanuts as a snack, and Roscoe is not really a fan of peanuts and won't even get up from the couch to see what I'm eating. Though he immediately got up and ran over as soon as I walked into the room with a bowl of Doritos!

And an Ommegang Hennepin, Belgian Saison ale. And I listened to Hooverphonic, Belgian ambient pop.

Dinner: Roast beef, rice and asparagus. 5.8 oz. eye round roast beef, previously cooked, sliced, vacuum sealed and frozen. Reheated in the sous vide for 40 minutes at 133°F from frozen. I made a new batch of beef gravy. And the baby asparagus only needed 2 minutes in boiling water.

I divided a package of chicken breast into 6.0 oz. servings, vacuum sealed and froze it. While I generally cook my food then freeze it, I keep uncooked chicken, shrimp and fish on hand. The chicken tends to end up in Japanese style chicken curry, chicken paprika or fried chicken fingers and boneless Buffalo chicken 'wings'.

And cooked 2 pounds of bacon.

Lunch: Turkey and cabbage stir-fry.

Nachos!

I had a sudden craving for nachos today, and what do you know, it's actually National Guacamole Day!

Normally I have pre-cooked, vacuum sealed and frozen taco seasoned ground beef, but, much my surprise, I was out.

I've started making my own ground beef from chuck steak, for hamburgers. When you start with a steak you know exactly what the quality is, where it came from and it's much less likely to contain e-coli, which is important since I like my burgers rare to medium-rare (133°F, not 160°F needed to kill e-coli).

Taco beef is cooked through but since I wasn't planning on making it I went to the tiny grocery store in town and I was a little concerned about the ground beef. Antibiotic-free, grass fed beef it was not. So I bought a cheap chuck steak:

ate.2011.09.16.c1.jpgI removed some of the tough connective tissue and a little fat, cut it into 1" cubes and into the food processor it went. It doesn't take long - maybe 15 seconds. I now have a meat grinder and I have to say it does a better job, but the food processor works pretty well.

I prepared a batch of homemade guacamole which often happens the day after sushi day, because I use half of an avocado in sushi, vacuum seal the other half with the pit and it lasts for a day (maybe two) in the refrigerator.

And it all comes together: tortilla chips, taco beef, black beans, japaleños, cheddar cheese. And an Ommegang Abbey Ale.

And in case you wondered how I plate nachos like that - my dinner plates are oven safe so I just bake a serving of nachos on the plate for 8 minutes at 350°F. The second plate underneath it is so I can pick it up without a towel since the top plate is HOT.

Obviously you could omit the beef and it would be vegetarian. And cheese and it would be vegan.

Dinner: Wild sockeye salmon, spicy green beans and rice. I previously seared the salmon on the grill, then chilled, vacuum sealed and froze it. 45 minutes in the sous vide at 140°F from frozen and it was perfect! With 2 glasses of Red Cliffe sauvignon blanc, New Zealand.

I prepped a new batch of bagels to boil and bake tomorrow morning. Actually, I started it last night because it's a somewhat ridiculous 3-day process to make these bagels, but it's well worth it!

Yesterday I cooked a split turkey breast in the sous vide and today I sliced it into one dinner serving of sliced turkey (6.0 oz.), two packages for sandwiches (3.0 oz. each), one package for stir-fry (3.2 oz.) and the leftover for Roscoe.

This is really the same recipe as my original sausage and green pepper lasagna, but this time I used homemade tomato sauce instead of jar sauce.

This can be frozen, but I haven't perfected the reheating method yet. Cooking it boil-in-bag for 22 minutes makes a well heated and tasty lasagna, but it doesn't look as good. I think it needs to go in the oven or broiler for a while to melt the cheese!
