What I ate: November 30, 2011

Breakfast: Sausage, egg and cheese biscuit. With homemade spicy pork breakfast sausage, an organic egg and Cabot extra sharp cheddar on a homemade buttermilk biscuit. And a glass of orange juice.

Lunch: Roast beef sandwich and Kettle Chips barbecue potato chips. With 3.0 oz. homemade eye of round roast beef on one slice of Barowski's wheat bread, cut in half with mayo and horseradish and lettuce.

Dinner: Bone-in roasted pork (2 pieces) and rice. There probably should have been a vegetable in there somewhere, but I wasn't feeling in a cabbage or broccoli mood tonight so I added a second slice of pork instead.

Breakfast: Homemade whole wheat bagel with 2.0 oz. lox, cream cheese, tomato and red onion. And a glass of orange juice.

I also cooked 2 pounds of bacon.

And made a new batch of homemade hamburgers. This time I used the meat grinder attachment on my Kitchen Aid mixer, which does in fact seem to work much better than the food processor. The last time I made a burger there were bits of unchopped fat, which really wasn't great. The grinder makes sure everything is evenly ground. They're seared on the grill then chilled, vacuum sealed and frozen for future reheating in the sous vide. These are 4.0 oz. each and formed in a 3 1/2" ring cutter.

Dinner: Italian sausage spaghetti. With homemade marinara, 2.0 oz. Barilla spaghetti, a spicy Italian sausage and wheat Italian bread with olive oil. And 2 glasses of Sangre de Viña malbec.

Dinner: Beer battered fish sticks and seasoned French fries. This is really just fish and chips, except I cut the fish into stick form first, which is more convenient for dipping into homemade tartar sauce. With the Saranac Adirondack lager left over after making the beer batter.

I have a long history of eating McDonalds only when traveling to Mom and Dad's house for holidays, but that seems kind of silly seeing as they're only 4 miles away now. And the nearest McDonalds is 6 or 7 miles away, in the opposite direction. 

My burgers are much better, anyway, made with home-ground chuck steak, Cabot cheddar cheese and a Barowski's wheat hamburger bun. With 3.0 oz. Cascadian organic French fries, deep fried and seasoned.

Lunch: Roast beef, gravy, mashed potatoes, salad and some cake, with Mom and Dad.


Dinner: Fish sticks and tater tots. Actually, they're homemade fish sticks, made with haddock, seasoned and prepared with standard breading (flour, egg and seasoned breadcrumbs). And homemade tartar sauce. I didn't make the tater tots from scratch. They're Cascadian organic spud puppies (4.0 oz.), cooked in the deep fryer.

I hadn't hadn't had fish sticks in many years but I do recall the last experience was not great. These, however, were quite tasty. I think I like the beer batter better, but the stick format is better suited for dipping. I might make beer battered fish sticks next time.

I grilled a couple filet mignon steaks, vacuum sealed and froze them. Yes, I realize that most people are not out grilling steaks at 8:30 A.M..

I also cooked an eye round roast beef, for future roast beef and gravy, roast beef sandwiches and beef stir-fry. And a pork roast for stir-fry. It was a two sous-vide machine morning!

Dinner: Shepherd's pie. With roasted lamb, gravy, peas, corn and mashed potatoes. 

I had previously frozen the lamb roast and mashed potatoes and due to a logical flaw it didn't occur to me until it was too late that even though the casserole is baked the potatoes still need to be cooked boil-in-bag first, otherwise the texture turns out wrong. Oops. It was still very tasty. 

I also still haven't figured out a way to attractively plate shepherd's pie, or at least the way I make it with roasted meat and lots of gravy, because it has absolutely no structural stability. I think I'm going to cook it in individual rarebit dishes, or preferably something a little deeper.

I did the day two preparation of for a batch of homemade whole wheat bagels. They're now formed into bagel shape and the dough will retard in the refrigerator overnight so I can boil and bake them tomorrow.


I roasted a whole chicken.

Dinner: Ribs and French fries. I previously cooked the ribs in the sous vide, smoked them then vacuum sealed and froze them. 45 minutes in the sous vide at 155°F (from frozen) reheated them perfectly. The French fries are Cascadian frozen organic French fries, deep fried for 2 minutes at 360°F. And 2 glasses of Septima malbec.

Meatballs

This is my recipe for very tasty though somewhat equipment-intensive meatballs. Makes about 8 meatballs.

A clove of garlic, minced. A handful of parsley, minced. A half an yellow onion, diced. Sweat the onion and garlic in a sauté pan over low heat until softened.

I start with about a pound of chuck steak. Making my own ground beef makes sure it's good quality and reduces the risk of e-coli or other contamination.

After going through the meat grinder attachment on the Kitchen-Aid mixer with the fine plate.

I've made meatballs with some combination of beef, pork, lamb, etc. but I prefer all-beef because I only have to cook them through to medium (140°F). If I threw in pork, then I'd have to cook it to a much higher temperature and the beef would be over-cooked.

With the onion and garlic, parsley, one egg beaten, salt, pepper, cayenne pepper and some bread crumbs. Scale off 2.2 oz. per meat ball and form into balls.

My trick for perfect meat balls is to deep fry them. 1:30 at 360°F. Large meatballs like this won't be cooked through at this length of, but the outside is perfectly browned and the meatballs stay round and don't fall apart.

Here they are frozen and vacuum sealed. Two packages have three meatballs and one package has two.

My original menu was a stir-fry, but I spent all morning working in the garage installing new outlets and lights, and was in the mood for something quick and easy.

I didn't finish my project because I ran out of wire, but I still had a celebratory beverage: A Saranac Adirondack lager.


Dinner: Iron Chef Chinese Buffet with Mom and Dad. There was a slightly smaller second plate as well, which I forgot to take a picture of, but pretty much looked like last week.

What I ate: November 5, 2011

Breakfast: Corned beef hash, 1 scrambled egg and 1/2 slice of Barowski's wheat bread toast with Earth Balance spread. That's 1/3 of a 15 oz. can of hash, which is actually the recommended serving size, previously cooked, vacuum sealed and frozen.

Snack: 0.7 oz. peanuts.

Lunch: Bacon, lettuce and tomato sandwich on one slice of Barowski's wheat bread, cut in half. With mayo. And Kettle Chips barbecue potato chips.

Dinner: Tingua poblano, spicy pork and potatoes in a spicy, smoky tomato sauce. With a warm flour tortilla. And 2 glasses of Finca Don Cano malbec. This is a boil-in-bag reheat, so no pots and pans to wash today, either!

Dessert: 2 strips (6 squares) of Green & Black's hazelnut currant dark chocolate.

Snack: 1.0 oz. of Chex mix.

What I ate: November 4, 2011

Breakfast: Blueberry muffin and bacon, both previously frozen.

Snack: A Spicy V-8.


Lunch: Zucchini and bacon stir-fry

Dinner: Braised short ribs and garlic mashed potatoes. The beauty of this meal is that I previously made and froze everything. The beef went into the sous vide for 45 minutes at 140°F. The mashed potatoes went into boiling water, then reduced to simmer, for 20 minutes. Since everything was cooked in a bag, the only cleanup was the plate... and that went into the dishwasher!

Dessert: 2 strips (6 squares) of Green & Black's hazelnut current dark chocolate.

Snack: 2.0 oz. Doritos. I should not have bought these.

Breakfast: Pancakes, sausage. Both were previously cooked and frozen. And a half glass of orange juice.

Lunch: Stir-fry of sausage and green peppers with rice. With 2 pieces of homemade pork sausage. There's sausage for both breakfast and dinner because lunch was supposed to be zucchini and bacon stir-fry, but I was more in a sausage and green pepper mood so I made that instead.

What I ate: November 2, 2011

Breakfast: Chorizo, green pepper, jalapeño, onion and egg breakfast burrito. A reheat from a few days ago, so this is quick and easy: Wrap the tortilla in a damp kitchen towel and microwave for 45 seconds. Reheat the filling for 40 seconds. And a half glass of orange juice.

Snack: Spicy V-8 and 0.7 oz. peanuts.


Lunch: Pork, broccoli and scallion stir-fry.

Snack: 1.0 oz. Chex mix.


Dinner: Fish and chips. Homemade beer-battered haddock, homemade tartar sauce and 4.0 oz. French fries (organic), seasoned. With 9 oz. Saranac Adirondack lager (the rest went into the beer batter).

What I ate: November 1, 2011

Breakfast: Bacon egg and cheese English muffin. On a Barowski's whole wheat English muffin. And Cabot cheddar cheese. And a small glass of orange juice.

Lunch: Roast beef sandwich and potato chips. With 3.0 oz. homemade eye round roast beef on one slice of Barowski's wheat bread, cut in half, with mayo and horseradish and lettuce. And Kettle Chips barbecue potato chips.

Snack: 1.0 oz. chex mix.

Dinner: Roasted turkey, rice, gravy and broccoli. I had previously roasted a split turkey breast, sliced, vacuum sealed and froze it, so it only took 45 minutes (from frozen) in the sous vide at 160°F to reheat it. With a glass of Cupcake sauvignon blanc.
