Dinner: Cheesesteak sandwich and Kettle Chips hot jalapeño potato chips. The bread is a little mangled because I cut a big chunk out of the middle of the roll to make it less bready, but cut out a little too much!

Walked to the convenience store, a little more than a mile, to buy a Powerball ticket. I can count the number of times I play per year on one hand, but, hey, for $ 500 million, I'll give it a shot.

Normally I made the filling on Wednesday and have other half of the filling on Friday or Saturday. Over the summer my schedule was interrupted by a holiday, so I ended up freezing the filling. As it turns out, it freezes quite well! I think I might start making a double batch and freezing 2 or 3 servings.

Dinner: Spaghetti and meatballs. With 1.7 oz. (dry weight) spaghetti, 2 meatballs and homemade tomato sauce. This is from the batch that's abnormally chunky because I accidentally used diced instead of crushed tomatoes and didn't think to use the stick blender on it until after I vacuum sealed the individual servings.

Dinner: Chicken and cheese enchilada. And 1.0 oz. tortilla chips and Green Mountain Gringo salsa. This was previously vacuum sealed and frozen; I defrosted it then reheated in the oven for 15 minutes at 375°F. It wasn't quite as good as fresh, but it was pretty good!

Dinner: Meatloaf, rice and gravy. There probably should have been some peas or something green on the plate, but there wasn't. I started freezing my meatloaf with 1 1/2 slices in the vacuum sealed bag, so it's pretty close to a 5.0 oz. serving, which is a good size. Reheated for 45 minutes in the sous vide at 136°F from frozen.

Breakfast: Raisin toast with butter and 2 slices of bacon. With homemade cinnamon raisin bread.

Chicken fried steak

I haven't had this dish in years! I think the last time was at the (since closed) Black-eyed Pea in Herndon, Virginia. I figured, how hard could it be to make?

Here's my cube steak, seasoned with salt, freshly ground black pepper, garlic powder and a little cayenne pepper.

ate.2012.11.02.c3.jpgThere's also all-purpose flour and buttermilk. Dredge the beef in the flour, buttermilk, then back into the flour.


The pot in the back left is my mashed potatoes, previously cooked, vacuum sealed and frozen, being reheated boil-in-bag.

The front left is a batch of chicken gravy made with 8.0 oz. water, 0.5 oz. More Than Gourmet chicken stock concentrate and 8.0 oz. water with 1/4 cup of all-purpose flour.

The right is a pan of vegetable oil for frying the steak at 360°F on my induction hot-plate. It automatically controls the temperature, and is much less likely to set a pot of hot oil on fire, compared to the gas stove underneath! I cooked the thin cube steak for 5 minutes, 2:30 on each side.

What I ate: November 1, 2012

Breakfast: Bacon, egg and cheese English muffin sandwich. With 3 slices of bacon, one organic egg and Cabot cheddar cheese on a Barowski's 12-grain English muffin.

Snack: 1.0 oz. Sriracha chex mix.


Lunch: Asian lettuce wrap, hold the lettuce. I served it with rice, and it was really good. Sort of a spicy and crunchy, because of the water chestnuts, version of Japanese-style crushed hamburger.

Dinner: Filet mignon steak and salt and oil-rubbed baked potato with butter and sour cream.
