Fried rice

This is more or less Mom's recipe for fried rice, which apparently I never wrote down before. This is a much smaller recipe than she would make.

The basic ingredients are

Diced carrot
Diced green pepper
Diced mushroom (Mom used canned, but these are fresh)
Sliced green cabbage
Sausage (that's sweet Italian, but Mom used Jimmy Dean original, which is actually a bit better but this is what I had on hand)
Rice, cooled (white sushi rice)

Not pictured:

1 sliced of bacon, diced

Optional:

Thinly sliced green part of scallion
One egg cooked flat and thin and sliced into tiny strips

Cook the sausage for several minutes.

Push to the side and add the carrots and cook for a few minutes.

Add the green peppers and cook for a minute.

Add the cabbage, mushrooms, and bacon and cook for several minutes.

Add rice and cook until reheated.

Add freshly ground black pepper and soy sauce to taste.

If using the scallions and egg, add right at the end of cooking. The egg ribbons could be added after plating as well.


I eat about a 4.5 oz. serving, which is less than half of Mom's serving size. Thus this amount made 3 meals for me. I vacuum sealed and froze the leftovers, and it reheats well in the sous vide or boil-in-bag.

Lunch: Other half of a salmon BLT take-out from Hwy 7 Bar and Grill in Bainbridge, NY. I fully disassembled the sandwich before refrigerating so I was able to reheat the fries (9 minutes), salmon and bacon, and toast the bun (5 minutes) on a sheet pan in the oven at 350°F.

What I ate: June 5, 2020

Breakfast: Chorizo breakfast burrito with chorizo, onion, green pepper, jalapeño and egg. Reheat of the filling I cooked Sunday in a freshly heated whole wheat tortilla.

Snack: 1.0 oz. Sriracha chex mix. And, later, habanero chickpeas, dry roasted edamame, and 3 seaweed sesame crisps.


Lunch: Pork with scallion and broccoli stir-fry. I forgot to take a picture of it, but it looked like this:

Dinner: Chinese roasted pork on garlic bread and a few Kettle Chips hot jalapeño potato chips and a Switchback Ale.

Miracle noodle marinara with Italian sausage

I decided to try an assorted box of Miracle Noodle, a low-carb noodle-like product. If you've had Japanese Konnyaku, that's what it is (konjac plant flour). So it doesn't have the same texture as wheat noodles, but it's not bad.

There are a bunch of plain varieties but this package was ready-to-heat noodles with marinara.

The 40 calories is a bit misleading because that's for two servings out of this bag. It's a little big for one serving, but I think it's a little small for two servings. Also even at 80 calories that's nowhere near enough for dinner, so I added a hot Italian sausage (previously cooked and frozen). I reheated it in a sauté pan over low heat and added some red pepper flakes.

It was OK. I prefer more and chunkier marinara and I like Konnyaku in Japanese dishes, but this is kind of weird. Still, it was definitely edible and not bad, and I ate most of the two servings of noddles. And it is pretty low in carbs.

Lunch: Veggie Buffalo "wings" and salad. I had a mix of Morningstar and Quorn nuggets today. I think I like the Morningstar ones better. The Quorn ones are kind of dry and crumbly, despite deep frying them.

Dinner: 1 1/2 slices of Gavin's cheese pizza, previously frozen, with added pepperoni. And a glass of Bota Box malbec.
